Bigos Girls Don't Cry!

NATIONAL DISH OF POLAND - Bigos

(NB - The above post title refers to the song by The Four Seasons and not that stupid song by Fergie)

Bigos, according to the awesome source that is Wikipedia, is a hunter's stew that consists of stewing many meats. It is ideal for leftover cuts of meat you have, with the more varieties of meat the better. Traditionally made during winter, in particular the second day of Christmas (Boxing Day). This becomes fairly obvious after eating a hearty serve of Bigos, it leaves you feeling warm and content.

It is a hugely venerated dish in Poland, evident of it's appearance in poetry and literature. And it is claimed to have been around since the 14th Century. And with one bite you can certainly see why it has never strayed far from the Polish consciousness.

The recipe I found was apparently taken from the Polish Government website, and you can't get more venerated than that! For the delectable recipe look here:

Enjoy, or as they say in Poland, Smacznego!

Now it may not be the most appealing thing to look at, and the smell of boiling sauerkraut may be off putting to some, you just have to wait for the taste. I know that this vlog is still in its' infancy, but regarding taste, I believe Bigos is the best dish so far! The aroma of the various meats cooking and the flavours they develop whilst stewing is intoxicating. And the end result of all the stewing leaves the meat being so tender and succulent.

Being relatively easy to make, just letting the stew simmer away for a few hours, the only labour being the initial heat sealing of the meats. I can certainly see Bigos as becoming a staple during the colder months, and am eagerly anticipating winter so I can make it again!
